GARLIC-STUFFED POTATOES
Serve three or four potatoes per person as a tasty accompaniment to Emperor Chicken.
Although it may seem like a lot of garlic, the garlic becomes tender and sweet after it’s been roasted.

Yield: 4-6 servings
20 small new potatoes 20
20 garlic cloves 20
olive oil

With apple corer, cut core from centre of each potato, reserving cores. Push clove of garlic into opening of each potato. Cut reserved cores in half crosswise and insert into openings to plug ends. Brush lightly with oil. Roast alongside chicken.
